Artisanal Winemaking

Wine Fermentation

The entire fermentation process utilizes the most advanced automatic temperature control technology to maximize the preservation of fresh fruit aromas. To reveal the "soul" of each plot, the winery carries out separate fermentations for each plot and each vat, as well as differentiated aging by barrel according to the soil characteristics.

Next, malolactic fermentation takes place, the main role of which is to soften the acidity, preserve a rich texture and aromatic density, and maintain the wine's freshness and fruity aromas. After fermentation, the wine is aged in French oak barrels.

We select our barrels to suit the different characteristics expressed by our vineyard plots and the various grape varieties. Their tannic structure and aromatic profile determine our aging choices, during which a secret alchemy takes place. From this intimate connection between the wood and the fruit, each batch of wine, tasted throughout the aging process, will flourish. The different batches will be blended after at least 12-18 months of aging for our Richelieu, a wine of character where the fruit remains at the heart of the flavor.
